Vegan Lentil & Vegetable Soup

A hearty, protein-packed soup with lentils, carrots, celery, and tomatoes. Perfect for a comforting lunch or dinner.

Ingredients:

  • 1 cup dried lentils
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • Salt & pepper

Preparation:

  1. Sauté onion, carrots, and celery.
  2. Add lentils, tomatoes, broth, and spices.
  3. Simmer 30–40 minutes until lentils are tender.
  4. Adjust seasoning and serve hot.
