This simple Chicken Chili can be made in an hour. The recipe will easily serve two with plenty for leftovers.

Ingredients

1 boneless skinless chicken breast

1 tablespoon olive oil

1/2 sweet red pepper

1/4 green pepper

1 roma tomato

1/2 sweet onion

1 can black beans

1 can pinto beans

1 can diced tomatoes

1/2 can tomato sauce

1/2 cup sour cream

1 teaspoon cocoa powder

1 teaspoon flour

salt

chili powder

  1. Cut up chicken breast into bite sized pieces
  2. Cut up pepers into bite sized pieces
  3. Coursely chop onion
  4. Mince garlic
  5. In a medium saucepan saute chicken in olice oil until just cooked through
  6. Add peppers, tomato, onion and garlic
  7. Cover and simmer over medium heat for 3-4 minutes until vegetable are tender. Stir 3-4 times to keep anything from sticking to the bottom of the pan.
  8. Add the beans, diced tomatoes and tomato sauce, stir well.
  9. Add salt and chili powder to your taste
  10. In a small bowl combine the sour cream, cocoa powder, and flour and beat with a fork until it is a smooth mixture with no lumps.
  11. Add sour cream mixture to chili and stir until well combined
  12. Simmer on low heat for 20 minutes, stirring every every few minutes
  13. Serve with a sprinkling of chedder cheese and a dot of sour cream
