This simple Chicken Chili can be made in an hour. The recipe will easily serve two with plenty for leftovers.
Ingredients
1 boneless skinless chicken breast
1 tablespoon olive oil
1/2 sweet red pepper
1/4 green pepper
1 roma tomato
1/2 sweet onion
1 can black beans
1 can pinto beans
1 can diced tomatoes
1/2 can tomato sauce
1/2 cup sour cream
1 teaspoon cocoa powder
1 teaspoon flour
salt
chili powder
- Cut up chicken breast into bite sized pieces
- Cut up pepers into bite sized pieces
- Coursely chop onion
- Mince garlic
- In a medium saucepan saute chicken in olice oil until just cooked through
- Add peppers, tomato, onion and garlic
- Cover and simmer over medium heat for 3-4 minutes until vegetable are tender. Stir 3-4 times to keep anything from sticking to the bottom of the pan.
- Add the beans, diced tomatoes and tomato sauce, stir well.
- Add salt and chili powder to your taste
- In a small bowl combine the sour cream, cocoa powder, and flour and beat with a fork until it is a smooth mixture with no lumps.
- Add sour cream mixture to chili and stir until well combined
- Simmer on low heat for 20 minutes, stirring every every few minutes
- Serve with a sprinkling of chedder cheese and a dot of sour cream
