Quick and Easy Sesame Tofu Lo Mein (Better Than Takeout!)

This easy 30-minute meal will rival or surpass any takeout lo mein. It is protein-packed and full of flavor. It goes well with a side of your favorite steamed vegetables.

 

Sesame Tofu Lo Mein                                   Serves: 2 People- recipe can easily be doubled.

Prep time: 10 Minutes

Cooking time: 20 Minutes

Ingredients

Tofu ½ pound

Lo Mein ½ pound

Soy Sauce ¼ cup

Rice Vinegar 2 tablespoons

Toasted Sesame Oil 1 tablespoon plus 1 teaspoon

Chili Garlic Sauce 1 teaspoon

Garlic Powder ½ teaspoon

Directions

  1. Cut tofu into about 1inch thick slices.

  3. Cut tofu into bite-sized cubes.
  4. Heat 1 teaspoon of sesame oil in a small frying pan.
  5. Toss tofu in the oil to coat and fry or sauté until tofu is golden brown.
  6. Remove tofu from oil and set aside in a small dish. Bring a medium saucepan of water to a boil and add lo mein. Set the timer for 4 minutes.
  7. Mix soy sauce, rice vinegar, 1 tablespoon of toasted sesame oil, chili garlic sauce, and garlic powder in a medium-sized bowl, whisk rapidly with a fork or small whisk into a frothy, uniform sauce.
  8. Add scallions and whisk briefly.
  9. Stir in tofu.
  10. Drain the lo mein and add it to the tofu sauce bowl.
  11. Serve topped with a sprinkle of sesame seeds.
  12. Enjoy!
