This easy, flavorful dish is perfect for those weeknight meals.
Tip: Cut up meat and vegetables in the morning or the night before so that all you have to do is cook the rice and the pepper steak before hangry family hoards get to you.
Ingredients For a Family of Four
2 pounds of round steak
1/4 cup of soy sauce
2 tablespoons of cooking oil
1 cup of onions coarsely chopped
2 cloves of garlic, minced
1 tablespoon of sugar
1/2 teaspoon of salt
1/4 teaspoon pepper
1/4 teaspoon ginger
4 tomatoes
2 large green and red peppers
1/2 cup cold water
1 tablespoon cornstarch

For 6 cooked cups of rice
2 cups dry rice
4 cups water
- In a medium saucepan, combine rice and water. Bring to a boil, then turn to low heat. Simmer for 20 minutes, then turn off the heat and allow it to steam until the Pepper Steak is ready.
- Cut the beef into strips about an inch wide and 2-3 inches long.
- Heat the oil in a deep skillet with a lid.
- Put the meat in warm oil and saute on medium heat, stirring every minute or so until the meat is lightly browned on all sides.
- While the meat is browning, coarsely chop the onions and finely dice or mince the garlic.
- When the meat is browned, add soy sauce, onion, garlic, sugar, salt, pepper, and ginger.
- Cook for 1/2 hour on medium-low heat, stirring about every 10 minutes to make sure nothing is sticking to the bottom of the skillet.
- While the meat is cooking, cut the peppers into half-inch strips and the tomatoes into quarters.
- Add tomatoes and peppers to the meat mixture and stir well.
- Cook on low heat so that the mixture is just simmering for 45 minutes.
- Combine water and cornstarch and stir the mixture well.
- Add the cornstarch mixture to the meat and stir until the liquid resembles a light gravy.
- Uncover rice and fluff with a fork.
- Serve rice with Pepper Steak.
