Just in Time for Sunday Dinner: Super Easy Lazy Noodles Recipe

three eggs and a wooden bowl of flour

Some Sunday dinners are all about the classics- tender beef, a slow roast, rich gravy- and then something simple on the side that makes the whole plate feel complete. These lazy noodles are exactly that. They come together in minutes, soak up every bit of savory gravy, and add a soft, comforting balance to the heartier parts of the meal. No fuss, no extra steps, just an easy, cozy addition that turns a good Sunday dinner into a great one.

Lazy Noodles in 4 Easy Steps

Prep time: 10 minutes                         Cooking time: 5 minutes               Serves: 4

Ingredients

Eggs  3

Flour  2 cups

Beef broth 4 cups- homemade is delicious for making gravy, but prepared from bouillon, or liquid stock, works well too.

  1. Beat eggs with a fork until they are frothy.
  2. Sift in 2 cups of flour, mixing as you go.
  3. Stir the dough with the fork until it is smooth and only slightly sticky. If it sticks to your fingers, mix in 1 tablespoon of flour. Stir just enough to smooth the dough without lumps. Don’t knead the dough because it may make tough noodles.
  4. Pinch off nickel-sized bits of dough and drop them into simmering broth. Wait 10 minutes and scoop out with a slotted spoon.
  5. Serve with your gravy, beef roast, and something green for color! Enjoy.
