One-Pan Lemon Herb Chicken & Veggies

A healthy, flavorful dish featuring tender chicken breasts and colorful vegetables roasted together with a lemon-herb marinade.

Ingredients:

  • 2 chicken breasts
  • 1 lemon, sliced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt & pepper to taste

Preparation:

  1. Preheat oven to 400°F (200°C).
  2. Arrange chicken and veggies on a sheet pan.
  3. Drizzle with olive oil, sprinkle with thyme, salt, and pepper.
  4. Top with lemon slices. Roast for 25–30 minutes until chicken is cooked through.
