With just a few simple techniques, you can turn a basic grill into your go-to tool for easy, flavorful meals.

This guide walks you through the essentials- from understanding the heat zones to choosing the right tools- so you can step outside, fire up the grill, and cook with confidence. Whether you’re making burgers, veggies, or your first set of chicken thighs, these basics will help you get great results every time.

Two critical grilling tips-

-Always preheat your grill just like you would your oven. Check the temperature you are planning to cook at and set the grill. Leave it for a few minutes for the grates to heat up, and the inside to warm to the temperature you want to grill at.

-Every time you open the grill, the temperature drops. Grilling times will vary from any published time you might read about if you grill with the top open much of the time.

Where to start with temperature-

High heat- 460-650 degrees- This is best for searing, which you would use for steaks, pork chops, and roasts.

Medium- 375-450 degrees- This is the most common grilling range. It is used for a wide range of foods, including chicken, burgers, vegies, and breads.

Medium low- 275-350 degrees- This setting is most often used for roasts and sausages.

Where to start with times-

These times will vary depending on the thickness of the meat, how often you open the grill, and, for steak and hamburgers, how well done you would like your meat.

Cut up chicken- 5-6 minutes per side.

Whole chicken, split: 15 minutes per side, then check the internal temperature with a meat thermometer. If it doesn’t read 165 degrees or higher, leave it on the grill for 5 additional minutes per side.

Chicken wings- 20-30 minutes, turning every few minutes.

Beef steaks: sear on high heat for 1 minute per side, then reduce the heat to medium and grill for 4-5 minutes per side for medium-rare.

For thick steaks of 1 1/2 inches or more, grill for 7-8 minutes per side.

Burgers- the grilling time will vary depending on how thick you have made them and how well you want them done. In my estimation, this makes burgers one of the hardest meats to grill, too long and they will be dry and tough, too short and they will be bloody when your guests try to eat them. They are one of the few meats I would recommend opening the grill for often and turning occasionally; don’t worry if it takes a few tries to get them just the way you want them.

Pork chops – 1/2-3/4 inch – I think it is very difficult to perfect the grilling time and temperature for pork chops. They are not fatty meat and tend to dry out. Start with 5 minutes per side over a medium heat. When both sides have been grilled, check with a meat thermometer. They will be ready when the temperature, about halfway through the chop, is 160 degrees.

Pork ribs- There are so many good recipes for making barbecue pork ribs. I will only give a brief introduction to the basics. Grill at 300-350 degrees for 1.5-3 hours, depending on size. Check with a meat thermometer. You are done at 160 degrees.

*A note about pork- pork should never be eaten rare. Our food supply is fairly safe here in the U.S., but there is always that risk of being exposed to trichinosis, a parasitic infection, which can cause nausea, vomiting, and diarrhea. The parasite larvae can then migrate to the heart, muscles, and brain, potentially causing life-threatening complications.
